- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine cottage cheese, honey or maple syrup, and vanilla extract until smooth.
- In a separate bowl, mix almond flour, cocoa powder, chocolate protein powder, and salt.
- Fold the dry mixture into the wet ingredients until just combined.
- Pour the batter into a lined 8x8 inch baking dish and spread evenly. Sprinkle mini chocolate chips on top if desired.
- Bake for 20-25 minutes until edges are firm and center is slightly soft. Let cool before cutting into squares.
