Ingredients
  

Sweet Potatoes
  • 2 medium sweet potatoes about 1 pound
  • 1 cup cottage cheese
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped walnuts or pecans
  • 1/4 cup dried cranberries or raisins
  • salt and pepper to taste
  • fresh parsley or chives for garnish (optional)

Method
 

  1. Wash the sweet potatoes thoroughly and pierce them several times with a fork. Place them on a baking sheet.
  2. Preheat the oven to 400°F. Bake the sweet potatoes for 45-60 minutes until tender.
  3. In a bowl, mix cottage cheese, honey or maple syrup, cinnamon, vanilla extract, salt, and pepper until well combined.
  4. Once the sweet potatoes are cool, cut them in half and scoop out a small portion of the flesh. Fill the well with the cottage cheese mixture.
  5. Top with chopped walnuts or pecans and dried cranberries or raisins. Garnish with fresh herbs if desired.
