Wash the sweet potatoes thoroughly and pierce them several times with a fork. Place them on a baking sheet.
Preheat the oven to 400°F. Bake the sweet potatoes for 45-60 minutes until tender.
In a bowl, mix cottage cheese, honey or maple syrup, cinnamon, vanilla extract, salt, and pepper until well combined.
Once the sweet potatoes are cool, cut them in half and scoop out a small portion of the flesh. Fill the well with the cottage cheese mixture.
Top with chopped walnuts or pecans and dried cranberries or raisins. Garnish with fresh herbs if desired.
